The same way it handles all voice data: it gets buffered and then output somewhere, depending on whether it's an application receiving the output, the speakers, or a file.

If you open the X Terminal and type:

uname -a

I think the OTA update just updates as little as possible. If a system file doesn't have any changes in the update, the OTA update doesn't change that file.

normally you can only connect to the APN which is provided by your phone company. Maybe if some resellers are also using the same network, you could use there APNs. but I guess that is not possible...
