My question was really about the apt pinning and why it didn't do what I thought it should.
That's all been cleared up now, although I still wouldn't know how to extend the pinning to exclude community-devel, too. See post #4.

I just tried with claws-mail from extras-devel, and with the apt pinning as above it installed all dependencies from the stable repos?
